ARBOR, HONG KONG (from spring 2027)
On the 25th floor of H Queen’s in the heart of Central, Arbor, Latin for “tree,” offers nature-rich Nordic-Japanese gastronomy at two-Michelin-star level. Chef-owner Eric Räty, who hails from Finland, combines Nordic foundations with Japanese sensibilities; the restaurant earned its first Michelin star just eight months after opening and its second the following year. Wine director Sebastien Allano, formerly head sommelier at Four Seasons Hong Kong and previously at La Tour d’Argent, Daniel and Le Bernardin, is responsible for the wine list and pairings. Chris Yui, Group Head Sommelier of Gourmet Dining Group, which also includes ÉPURE and Ami, works alongside him. In autumn 2026, we spent a wonderful afternoon with him at our winery.
